Our July 4th

Our 4th of July was fairly laid back. We fed my Dad's horses...

This is Helona and baby Stuart...he's only about 6 weeks old.

We spent the afternoon sitting around and relaxing. {This goofy photo was taken by my 8 year old son.}


Grandpa and Little H having a conversation...




We watched fireworks, roasted marshmallows, and sat around the campfire until way after midnight....

Weekend BBQ

On the 3rd my dad threw a small bbq get together. After we got things set up, the kids decided to start a waterfight with Grandpa...

Even our 3 year old was in on the action....

Some took it quite seriously...

They ganged up on poor Grandpa...

Reloaded a gazillion times...

Some were punished for making comments like, "You can't get ME old man!"...

All had a great time and left the game completely soaked!

Afterwards, we all got to work fixing food for the bbq...I used the recipe from my blackberry cheesecake but used raspberries. It turned out just as good:)

Dad got to work grilling burgers and hotdogs...

It came together beautifully and we had a great time!

Cheescake

Last night I decided to try out a cheescake recipe that I had come across. While me and the Hub were shopping for the ingredients, I decided to improvise a bit and add blackberries. It turned out DeLiCiOuS! I'll share my recipe below if anyone is interested:)

Blackberry Cheescake

1 large pre-made graham cracker crust
3 boxes of cream cheese
Juice from 1 large lemon
1 can sweetened condensed milk
1 cup blackberries {or raspberries...or...}
1/3 cup sugar

Set out cream cheese to soften. Mix cream cheese, lemon juice and condensed milk until blended smooth. Fill the pre-made crust with aprox. 2/3 of the mixture. Add berries sugar to the remaining mixture and mix until well blended. Spoon and smooth out berry mixture over the first layer. You can use a butter knife to swirl the layers together or just leave them plain. Bake for 30-35 mins on 375*. {The top of it will be a little firm to the touch.} Let cool about 20 mins and then cover and chill in the refrigerator until ready to serve. Enjoy!
